Raya Apple Muffins.

SELAMAT HARI RAYA!!
Let us forgive, forget and feast together.

Ok, ok..... slightly overdue, but better late than never, right? Well, I'm gonna make this a quick one, finals are one week away *shudder*. Just wanted to share this recipe. Made a batch to take over to Arisha's house (open houses, the perks of being Malaysian) as 'buah tangan'. Adapted from '500 cupcakes and muffins' by Fergal Connolly. Original was called 'apple and cinnamon muffins'


Apple crumble muffins. Makes 6 jumbo sized muffins.

=For Muffins=
~320g plain flour
~125g brown sugar
~4tsp baking powder
~1+1/2tsp cinnamon+1/2tsp allspice
~4tbsp veg oil
~50g butter, melted
~2 eggs
~100ml milk + 75ml sour cream/yogurt

~1 red apple, skinned and grated.

=For Topping=
~2 tbsp flour
~1/4 cup brown sugar
~1 tbsp butter.


Preheat oven to 175'C. Line a six-cup Texas muffin tin.

Combine flour,sugar,baking powder and spices in a medium bowl. In a large bowl, beat remainder muffin ingredients till combined. Fold dry ingredients into wet, DON'T OVERMIX. It's NECESSARY to have a lumpy batter. Just stir till everything's moist. Divide batter into muffin tins, then set aside.

Rub butter into flour and sugar to make the topping. Distribute evenly over uncooked batter. Throw the lot into the oven for 20-25 mins. Take out, test, Enjoy. :)
